Product Description

Trehalose is a disaccharide formed by a 1,1-glycosidic bond between two α-glucose units. It is found in nature as a disaccharide and also as a monomer in some polymers. Two other stereoisomers exist: α,β-trehalose, also called neotrehalose, and β,β-trehalose, also called isotrehalose.
Trehalose recommended use is between 10 and 30% as a substitute for common sugar, although it can replace up to 100% of sugar content. Remarks: It can be applied to any preparation with aqueous content, also with high proportions of fat.
